That would be extremely difficult because they use spell effects not to be found in vanilla so you would have to put the data in from somewhere else. We are talking about establishing an empty class slot and filling it with 20-35 spells to feel like a proper class. Each of these abbilities would take a long time to test and implement and then to balance against both content and other classes. Every class added means a lot more balancing which is exactly why the death knight was unbalanced all of Wrath and redone completely in cata with specific roles to simplify the balance issues. Since the server team has a drop of the ocean of Blizz ressources adding even a single class would take one year at least without working on other content.
While at least your suggestion is able to be implemented without breaking the six class maximum for vanilla races frame (night elves and forsaken have five class options) that should also be respected as a limitation. Trolls, Orcs, Humans and Dwarves have their six slots filled. Any class added would exclude those races naturally.
Also the lore would only support demon hunters in a limited capacity since death knights are more of Scourge domain. The implementation of death knights in Wrath was a narrative mess purely engaged for gameplay as the intro storyline was half assed to reintegrate unfitting characters with their factions without respecting the narrative framework.

Even demons hunters is really hard to accept lorewise. They let some fight inf the 3 war since everybody had to fight the biggest threat possible but still, they were'nt and will never be accepted in any society. They are pariahs pretty much, and far from being travelers/adventures or heroes 24h/24.

The thing about Demon Hunters is.. the alliance would never accept them immediately after the 3rd war. It's different from warlocks because warlocks are humans or gnomes, and those races are much more relaxed with fel magic than night elves or high elves. There's just no way for them to join as long as Illidan is still out there.
Besides, technically there are no demon hunter high elves for the same reason there are no warlock high elves. if a high elf becomes a warlock or a demon hunter or uses fel magic in any other way, he/she ceases to be a high elf, and turns into a blood elf.

The thing is that a demon hunter is evil agaisnt evil. They mostly let behind all that they were to merely get vengeance using the same power of whom they want to destroy, they become something else, blinded by vengeance. This behavior and ideology cannot fit any neutral and good alignment at all, and also cannot find a place in an evil one, because a demon hunter dances between both sides to merely kill what he oath to kill, until they are consumed by it.
People gotta reject everything retail wow made and start to play and read some stuff from war3 if they really want to understand warcraft lore. WoW is a fuckin mess, especially expansions which doesnt care at all about lore and story of the them park.

Warlocks are more "evil against evil" i think. Illidan is not evil in Warcraft III.

Illidan's background and power are evil, fighting in the 3 war for something worth for him, it is a mix between an anti hero and a villain, this is why it used to be so good. Might play the game again if you really think that way.

I rather see new custom class content, like spells, added to excisting classes to make them something like a new custom class. Death knight could totally be a form of sub class for warrior, maybe sacrifising something minor or major from the class such as stances, rage or spell rotation to get something new and more death knight authentic.
Demon hunter could definetly be a subclass for rogue.
A bad example is Dragonica with 4 starting classes but later on you have options to advance to progress further.
Also vanilla client only allow 6 classes per race and afaik that has never been worked around-
