Dwarf Priest for Alliance, Troll Priest for Horde.

If it's a question of style? Well… again, Dwarf Priest, for Alliance, but maybe a Forsaken for the Horde?
In the lore, The Light hurts all undead, so you could work with that if you're roleplaying at all. Otherwise, they just look cool while healing people.
